The wine region of Bundner Herrschaft is located in the region of Graubünden of Switzerland. Wineries and vineyards like the Domaine Obrecht or the Domaine Sprecher von Bernegg produce mainly wines red, white and sparkling. Graubunden (or Grisons, in the French language) is the easternmost administrative canton and wine appellation of Switzerland. Bordering Austria, this alpine region boasts just over 400 hectares (990 acres) of Vineyard, predominantly Pinot Noir grown in the Bündner Herrschaft and wider valleys of the Maienfeld region. The largest canton by land area in the country and the source of the Rhine river, Graubunden is basically divided into fertile valley floor and soaring alpine peaks. After making its way down from its source at the Tomasee, high in the Alps, the Rhine turns Northwards, through the substantial valley it has carved for itself over many millennia.

A natural compound contained in the skin of the grape, the seed or the woody part of the bunch, the stalk. The maceration of red wines allows the extraction of tannins, which give the texture, the solidity and also the mellowness when the tannins are "ripe". The winemaker seeks above all to extract the tannins from the skin, the ripest and most noble. The tannins of the seed or stalk, which are "greener", especially in average years, give the wine hardness and astringency. The wines of Bordeaux (based on Cabernet and Merlot) are full of tannins, those of Burgundy much less so, with Pinot Noir containing little.
