The wine region of Solopaca
First DOC of Sannio (1974) northwest of Benevento, vineyards between 100 and 450 m on the slopes of Taburno-Camposauro, ~1,100 ha. Aglianico is the signature red with intense black cherry, blackberry, plum, leather and a spiced hint, firm tannins and superb ageing potential. Supple Sangiovese and Piedirosso as complements. Falanghina is the signature white with citrus, white flowers, green apple and a mineral hint.
The wine region of Campania
Cradle of southern Italy's great wines on volcanic soils. Majestic Aglianico in red: structured, deep and tannic with notes of black cherry, candied plum, leather and spices, sublimated in age-worthy Taurasi DOCG, the "Barolo of the south". Identity whites of Irpinia: opulent Fiano di Avellino (honey, hazelnut), mineral iodine Greco di Tufo, aromatic Falanghina (peach, flowers). Also supple Piedirosso.
The word of the wine: Mutage
The act of adding alcohol to a fresh grape must or to a fermenting must.
