The wine region of Chablis 1er Cru 'Beauroy'
Premier Cru vineyard of 64 ha on the left bank of the Serein (Poinchy), encompassing Côte de Savant and Troesmes: 100% Chardonnay on Kimmeridgian soils alternating hard limestone and clay-marl rich in fossil oysters (Exogyra virgula). Exposed to dry east winds, susceptible to late frosts. Fine, supple, rich whites — vibrant and fruity with citrus, acacia and white flowers, taut Kimmeridgian minerality. Ageing 5–10 years, accessible and precise expression.
The wine region of Burgundy
Absolute reference for great terroir wines: opulent, mineral Chardonnay in whites (chiselled Chablis, buttery Meursault, majestic Montrachet), fine and silky Pinot Noir in reds (full-bodied Gevrey, structured Pommard, delicate Volnay). Exceptional age-worthy wines with complex notes - red fruits, undergrowth, butter, hazelnut. Some lively Aligoté and light Gamay (Mâconnais). 29,500 ha, 84 tiered AOCs (Régionale, Village, 1er Cru, Grand Cru), 1,247 UNESCO Climats.
The word of the wine: Tastevin
Metal cup, wide and of low height, being used to mirror and taste the wine. Still used in wine brotherhoods for its emblematic and folkloric character, the tastevin has been replaced by the various tasting glasses.
