Lively and distinctive whites with firm acidity and a lean palate, on typical aromas of green apple, pear, quince, honey, white flowers and waxy notes. Made as dry whites (Gaillac AOC), sweet passito-style wines and especially iconic sparkling wines: Blanquette de Limoux AOC and Blanquette méthode ancestrale AOC (the oldest documented sparkling method, 1531 at Saint-Hilaire). Also in Crémant de Limoux AOC. Native South-West French variety.

The wine region of Blanquette méthode ancestrale

France's oldest sparkling AOC, from the Limoux country of Aude (AOC 1938). Natural ancestral method with no liqueur de tirage: partial fermentation then bottled in March on a descending moon, in-bottle secondary fermentation at 6–7°C. Mauzac (100%) is the sole grape — unique honey, acacia and stewed apple aromas, natural residual sweetness, fine bubbles and preserved freshness. The ancestral forerunner of Champagne.

Largest single French vineyard, dominated by sunny, generous reds. Spicy Syrah, candied Grenache (ripe fruit, garrigue), structured Carignan, deep Mourvèdre, supple Cinsault. Stars: structured Corbières, Minervois, Faugères, Saint-Chinian; round Côtes-du-Roussillon. Legendary vins doux naturels: Banyuls and Maury (fortified Grenache) with notes of cocoa, fig, prune.
