Dry, powerful style of Valpolicella Classico (Fumane, Marano, Negrar, San Pietro, Sant'Ambrogio) via appassimento: Corvina (45-95%), Corvinone (≤50%) and Rondinella (5-30%) grapes dried ~120 days, losing 30-45% weight. Intense, full-bodied reds (≥15% abv) with dried fruit, candied black cherry, tobacco, spice, chocolate and leather, ample tannins and long ageing. DOCG since 2010, Venetian icon of concentration through dessication.
