Whites with many faces: mineral and taut at Chablis (lemon, green apple, flint), opulent and buttery at Meursault and Puligny-Montrachet (hazelnut, brioche, yellow fruits), tense and chalky in Champagne (Blanc de Blancs). Central VQA sub-appellation of Niagara-on-the-Lake (largest sub-appellation of Niagara Peninsula): Cabernet Sauvignon, Merlot, Cabernet Franc and Pinot Noir reign in full-bodied reds — profile of ripe dark fruit aromas, structure supported by excellent sunshine. Chardonnay, Riesling and Pinot Gris in whites with very ripe fruit aromas. Moderate climate with cool nights, sheltered from the lake under the escarpment, aromatic complexity.
