Discover the grape variety: Sauvignon

Rich, aromatic whites with a fuller mouth than Sauvignon Blanc and softer acidity, featuring aromas of yellow peach, melon, passion fruit, ripe citrus and delicate spicy notes. A grey-skinned mutation of Sauvignon Blanc, made as a rare single variety in Bordeaux (Pessac-Léognan, Graves), the Loire and Chile where it is experiencing a fine qualitative revival. Adds roundness to dry Bordeaux blends. French grape.

The wine region of Yorkville Highlands

Altitude AVA (1998, 40,000 acres) in southern Mendocino between Alexander Valley and Anderson Valley, vineyards above 800 ft: Cabernet Sauvignon dominant, followed by Syrah, Pinot Noir and Merlot (83% reds), promising Sauvignon Blanc. Rocky gravel-rich soils, superior drainage forcing roots deep — small concentrated berries. Marine influence over half the time, morning fogs, intermediate climate between warm Alexander and cool Anderson.

The wine region of California

Powerful, sunny reds: dense Napa Cabernet Sauvignon (blackcurrant, chocolate, tobacco, ample tannins), spicy, jammy Zinfandel from the Sierra Foothills, silky red-fruited Pinot Noir on the cool coast (Sonoma, Russian River, Central Coast). Opulent, buttery Chardonnay, notes of yellow fruit and vanilla. Varied climate, from the hot interior to the Pacific-cooled coast. 80% of US production, 139 AVAs including Napa (1st AVA, 1981).

The word of the wine: Concentrate

Said of a wine that is rich in all its components (sugars in sweet wines, tannins in red wines, aromatic compounds) and that leaves an impression of density, intensity and depth.
