The vineyards primarily consist of Grenache, Syrah, and Mourvèdre for the reds, and Roussanne, White Grenache, Clairette, and Viognier for the whites. All of the estate's wines are known for their pure expression of fruit, balance, and finesse on the palate. At the Catherine le Gœuil Estate, the vineyard is worked traditionally: short pruning, rigorous disbudding, green harvesting. The vines are plowed without the use of chemical herbicides and yields are deliberately limited to ensure the best possible quality. The grapes are harvested by hand and sorted in the vineyard.
