A natural French-American ternary hybrid that most certainly comes from an interspecific crossing between an unknown Vinifera with Vitis Aestivalis and Vitis Cinerea. The Jacquez was at the time the most multiplied in the World, present since always in the Portuguese island of Madeira. For a long time used as a direct producer, it was even used as a rootstock in the south of France, in the United States, in Mexico and in South Africa: some vines grafted on Jacquez still exist today. In France, it is one of the six hybrids prohibited since 1935 (included in European regulations): Clinton, Herbemont, Isabelle, Jacquez, Noah and Othello.

The wine region of Távora-Varosa is located in the region of Beiras of Portugal. Wineries and vineyards like the Domaine Murganheira or the Domaine Murganheira produce mainly wines sparkling, red and white. The most planted grape varieties in the region of Távora-Varosa are Touriga nacional, Touriga franca and Tinta Barroca, they are then used in wines in blends or as a single variety. On the nose of Távora-Varosa often reveals types of flavors of apples, spices or black fruit and sometimes also flavors of red fruit, raspberry or strawberries.

Whites are most often based on Fernão Pires and Bical, the latter being a small-berried variety with the affectionate nickname Borrado das Moscaos ('fly droppings').

The word of the wine: Reassembly

During the vinification process, a "cap" is formed at the top of the vats with the solid parts (skin, pulp, pips, etc.), which contain tannins and colouring elements. Pumping over consists of emptying the vat from the bottom and pouring the juice back to the top, in order to mix the cap and the juice and to favour the exchange and the extraction. This old technique allows a better exchange between the solid parts and the liquid.
