Elegant reds, light in colour with silky tannins, showing strawberry, cherry and raspberry aromas, evolving to forest floor, mushroom and spice with age. Fresh acidity, delicate finish. Star of the Côte d'Or (Romanée-Conti, Chambertin, Volnay), pillar of Champagne (Blanc de Noirs) and signature of Oregon, Central Otago and Sonoma Coast. The wine region of Saint-Aubin

Discreet AOC of the Côte de Beaune next to Chassagne-Montrachet and Puligny (AOC 1937): Chardonnay signature as king white (~75%) — golden robe with floral aromas (hawthorn, acacia) and fruit (citrus, yellow fruits), signature notes of flint, green almond and a vanilla oaked touch, firm and flattering. Pinot Noir as king red (~25%) — silky vivid texture with red and black fruit and spicy notes, fine tannins. 30 climats in 1er Cru on three-quarters of the vineyard.

The wine region of Burgundy

Absolute reference for great terroir wines: opulent, mineral Chardonnay in whites (chiselled Chablis, buttery Meursault, majestic Montrachet), fine and silky Pinot Noir in reds (full-bodied Gevrey, structured Pommard, delicate Volnay). Exceptional age-worthy wines with complex notes - red fruits, undergrowth, butter, hazelnut. Some lively Aligoté and light Gamay (Mâconnais). 29,500 ha, 84 tiered AOCs (Régionale, Village, 1er Cru, Grand Cru), 1,247 UNESCO Climats.

The word of the wine: Flavours

There are generally four so-called fundamental flavours: acidity, bitterness, sweetness and saltiness. The first three are considered to be the building blocks of the structure of wines. They are perceived by the taste buds that cover the surface of the tongue.
