Light, simple fruity reds with a lightly coloured light ruby robe, silky tannins and an airy palate with moderate acidity, showing undemonstrative aromas of red fruits. Discreet, rustic profile. Almost extinct, preserved in INRAE varietal collections, bearing witness to the pre-phylloxera ampelographic diversity of the South-West and part of the heritage grapes being studied. Rare French black grape, formerly grown in the South-West.

The wine region of Elgin
South Africa's coolest region on the Hottentots Holland heights (1 hr from Cape Town): Sauvignon Blanc signature as king white — racy and mineral with chiselled notes of citrus, green apple, passion fruit, herbs and a flint touch, signature lively acidity. Elegant tense Pinot Noir as king red (cherry, raspberry, earth, spices) and fresh Chardonnay as complement. WO Cape South Coast, 250-400 m altitude, ocean mists, varied soils (sandstone, granite, shale).
The wine region of Western Cape
Cradle of South African wine. Signature Chenin Blanc (Steen, 20%) in ample, fresh whites with notes of quince, yellow apple, honey and acacia flower, from crisp dry to sweet. Sharp, iodised Sauvignon Blanc (Walker Bay, Constantia), balanced Chardonnay. Reds: emblematic Pinotage with roasted aromas (coffee, plum, smoke), firm Cabernet Sauvignon, spicy Syrah.
The word of the wine: Cryo-extraction
This technique was very popular at the end of the 80's in Sauternes, a little less so now. The grapes are frozen before pressing, and the water transformed into ice remains in the marc, only the sugar flows out. As with the concentrators, the "cryo" can also increase bad taste and greenness.
