Fine cellaring potential, rustic profile. Nearly extinct after phylloxera, undergoing an identity revival among Ardèche winemakers in IGP Cévennes and IGP Ardèche. French indigenous variety from the Cévennes Ardéchoises, a pre-phylloxera heritage witness.

The wine region of Rioja Alavesa

Northwest sub-region of DOCa Rioja in the Basque Country (Álava), on altitude slopes sheltered to the north by the Sierra de Cantabria. Tempranillo signature red king: fine and fresh with signature notes of red cherry, raspberry, plum, sweet vanilla (American oak aging), tobacco and spice hint, fine tannins and elegant palate — airy style, among the finest of Rioja. Clay-limestone soils. Traditional carbonic maceration for young wines (cosechero), gourmand.

The word of the wine: Disgorging (champagne)

This is the evacuation of the deposit formed by the yeasts during the second fermentation in the bottle, by opening the bottle. The missing volume is completed with the liqueur de dosage - a mixture of wine and cane sugar - before the final cork is placed. For some years now, some producers have been replacing this sugar with rectified concentrated musts (concentrated grape juice) which give excellent results. A too recent dosage (less than three months) harms the gustatory harmony of the champagne.
