South African "home of Chardonnay" in the Breede valley: signature king white, full and fresh with notes of citrus, apple, white peach, vanilla and a chalky mineral touch, preserved acidity. The word of the wine: Extraction
All the methods (pumping over, punching down) that allow the colour and tannins to be extracted from the grape skin during maceration, before fermentation begins.
