The wine region of Ockfen

Star village of the Saar (Mosel, 90 ha on slopes of 38-80%), bare Devonian slate and greywacke terroirs. Riesling as signature white — vivid and finely spiced with intense notes of green apple, citrus, peach, white flowers and a typical Saar slate-mineral touch, vibrant tension and exceptional longevity; from dry GG to noble Auslese and Eiswein. Legendary Grosse Lage: Ockfener Bockstein, amphitheatre of 55 ha. Saar star since 975.

The wine region of Mosel

Kingdom of lively, crystalline Riesling: citrus, green apple, gunflint, tangy tension and signature slate minerality. From light, fruity Kabinett to off-dry Spätlese, up to sweet Auslese and Trockenbeerenauslese of rare finesse. Some supple Müller-Thurgau and lively Elbling. Steeply sloped vineyards (up to 65% at the Bremmer Calmont) on blue and grey slate, 5,400 ha of Riesling (61.

The word of the wine: Presses

The juice that results from pressing the grapes after fermentation. At the end of the maceration, the vats are emptied, the first juice obtained is called the free-run wine and the marc remaining at the bottom of the vat is then pressed to give the press wine. We say more quickly "the presses". Their quality varies according to the vintage and the maceration. A too vigorous extraction releases the tannins of pips and the wine of press can then prove to be very astringent. Often the winemaker raises it separately, deciding later whether or not to incorporate it totally or partially into the grand vin.
