Supple, fruity reds with a moderate ruby robe, silky tannins and an airy palate, with signature aromas of red fruits (cherry, strawberry), soft spices and Emilian floral notes. Also made as a taut, refreshing frizzante. Grown mainly in the Modena and Reggio Emilia region, it is the signature of distinctive artisanal Emilian cuvées. Native Italian black grape from Emilia-Romagna.

The wine region of New Jersey

East Coast US vineyard, tempered by the Atlantic and Delaware Bay (190-217 frost-free days). Bordeaux and Burgundy diversity on draining sandy soils. Firm Cabernet Sauvignon reds with signature notes of blackcurrant, black cherry, cedar and tobacco. Peppery Cabernet Franc, round Merlot (plum, cocoa).

A distinction is made between the ripeness of sugars and acids and the ripeness of tannins and other compounds such as anthocyanins and tannins, which will bring structure and colour.
