The wine region of Ajaccio

Ajaccio is an appellation for the white, red and rosé wines of Corsica, the French island located in the Mediterranean Sea between the coasts of Provence and Italy. The wines of Ajaccio (the majority of which are medium-bodied, Spicy reds and rosés) were granted AOC status in 1984. Centered around the town of Ajaccio on the southwest coast of Corsica, the appellation includes some of the island's greatest vineyards. Grape/sciaccarello">Sciaccarello (a traditional Corsican grape variety) is the key grape used in these wines, along with Barbarossa, Sangiovese (called Nielluccio here) and a host of other varieties, including Carignan, Cinsaut, Carcajolo Nero and Grenache.


The wine region of Corsica

Corsica is an island in the Mediterranean Sea, located between the southeast coast of France/provence">Provence and the west coast of Tuscany. Although it is closer to Italy, Corsica has been under French rule since 1769 and is one of the 26 regions of France. The island's Italian origins are evident in its wines, which are mainly made from the classic Italian Grapes Vermentino and Sangiovese (known here as Rolle and Nielluccio respectively). Despite its remoteness, Corsican winemakers have amassed an impressive and diverse portfolio of grape varieties - there are very few places on earth where Pinot Noir, Tempranillo and Barbarossa grow side by side.

After blending, the wine is bottled with a liqueur de tirage (a mixture of sugar and wine) and a yeast (selected yeasts). The yeast attacks the sugar and creates carbon dioxide. The fermentation, which lasts about two months, is prolonged by an ageing period (15 months minimum in total). The bottle is capped (some rare vintages are capped with a staple and a cork).
