Discover the grape variety: Concord
It is the result of a seedling planted in the United States, around 1840, recovered near the Concord River, a small river located east of Massachusetts. According to genetic analysis, it is an interspecific cross between the catawba and a vitis labrusca. Concord was for a long time the main variety cultivated in North America. It was introduced into Europe at the beginning of the 19th century, in France at the beginning of the phylloxera crisis, but was not widely propagated. It could be found in the Valleraugue region (Gard) at the foot of Mont Aigoual, in the Ardèche (our photos), etc. Today, it exists only as an isolated strain that can sometimes be found on the edge of a slope, which was our case. Through various and numerous crosses, it has been used to obtain some rootstocks and direct producer hybrids, which have now almost all disappeared.

The wine region of Grand Roussillon
Grand Roussillon is a Sweet, high Alcohol white wine produced in the Languedoc-Roussillon region of southern France. It is a natural sweet wine made by Mutage, which gives it an alcohol content of about 16% and a high natural residual sugar content. Some Grand Roussillon wines are produced using a prolonged oxidative ageing process, such as Rancio; all are subject to a minimum of two years' ageing before being released for sale. The main Grape varieties used to make this relatively rare wine are Muscat Blanc, Muscat d'Alexandrie, Grenache, Grenache Blanc, Grenache Gris and Maccabeu.

A gentle and slow toasting has little effect on the aromas. On the other hand, a strong toasting gives aromas of coffee or cocoa which will influence the taste of the wine. A wine barrel has already been aged for a year and has less impact on the wine than a new barrel.
