Judean Hills around Jerusalem, Israel's most dynamic region (~27% of vineyards). Mediterranean climate cooled by breezes, terra rossa over limestone. Signature reds: deep Cabernet Sauvignon (cassis, blackberry, cedar, maquis herbs), supple Merlot (plum, cocoa), peppery Syrah, airy Pinot Noir.
