Medieval Tuscan town with famous towers, vineyards at 200-400 m on clay-limestone hills (Siena). Vernaccia di San Gimignano white king (indigenous noted from 1276, Italy's first DOC in 1966, DOCG 1993): crisp and floral with green apple, citrus, fresh almond and mineral touch, slightly bitter finish — precise and upright. It is also possible to macerate after fermentation, but gently, so as not to extract the tannins from the seeds, which are greener. Because of its solvent power, alcohol favours extraction.
