The wine region of Grappa di Barolo

Exclusive Piedmontese denomination (Barolo DOCG Nebbiolo pomace, discontinuous low-pressure steam-copper distillation, 37. 5–60°, minimum 4 years oak aging). Nebbiolo flagship mono-varietal spirit: refined and complex with ripe red fruits (raspberry, cherry, plum), floral notes of rose and violet, sweet spices, toasted vanilla and persistent finish. Entire production in Piedmont.

The wine region of Piedmont

Kingdom of Nebbiolo: Barolo and Barbaresco DOCG, long-ageing reds with firm tannins and lively acidity, complex aromas of withered rose, sour cherry, tar, truffle and undergrowth. More accessible, tangy Barbera on red fruit, supple, crisp Dolcetto. Sweet, floral sparkling Moscato d'Asti, mineral, lemony Gavi (Cortese) white, round, almondy Arneis from Roero. 50,000 ha across the Langhe, Roero and Monferrato, UNESCO.

The word of the wine: Local wine

Table wine, but with the origin indicated. It corresponds to a particular legislation: the freedom to use grape varieties is greater than for the AOC, but the quality criteria such as the approval tastings can sometimes be more demanding. The legislation is still evolving, but for the moment there are three levels: regional (e.g. Vin de Pays d'Oc), departmental and local (e.g. Côtes de Thongue).
