Discover the grape variety: Savagnin
Vivid, structured whites with a golden robe, taut mouthfeel and sharp acidity, with aromas of apple, citrus, green walnut, curry, spices and intense oxidative notes (vin jaune aged under a yeast veil) evoking walnut, roasted almond and the distinctive "goût de jaune". The absolute star of Château-Chalon AOC, Arbois AOC, l'Étoile AOC and Côtes du Jura AOC. A very ancient Jurassian autochthon, probable ancestor of many European varieties.

The wine region of Château-Chalon
Ultra-exclusive Jura AOC (~60 ha, 250–400 m, steep south-west slopes, Liassic clay-limestone marls): exclusive Savagnin in the signature amber vin jaune — penetrating aromas of walnut, apple, candied fruits, curry (sotolon), gentle spices and saline minerality, exceptionally persistent finish. Aged under voile for at least 6 years 3 months in unsealed barrels, bottled in a 62 cl clavelin. Near-centennial longevity, Benedictine heritage.
The wine region of Jura
Unique Franche-Comté region between Burgundy and Switzerland, incomparable oxidative identity. Signature mythical Vin Jaune from Savagnin: aged 6 years 3 months in cask under flor, intense whites with signature green walnut, curry, cumin, russet apple, honey and lingering iodine — 62 cl clavelin, century-long ageing. Also classic topped-up Chardonnay (citrus, butter), pale light Poulsard red (strawberry, undergrowth), dense Trousseau, fine Pinot Noir. Sweet Vin de Paille.
The word of the wine: Garrigue
Notes reminiscent of aromatic Mediterranean herbs such as thyme or rosemary, found in many southern wines.
