Colourful, structured reds with a deep purple robe, firm, tight tannins and an ample palate with preserved acidity, featuring signature aromas of black fruits (blackcurrant, blackberry), red pepper and herbaceous notes typical of the Cabernet family. The wine region of Prince Edward County

Ontario appellation on a Lake Ontario peninsula, one of Canada's most northerly. Microclimate moderated by the waters, fractured limestone soils at Hillier. Signature Pinot Noir as cool-climate king red: fine and silky with red cherry, raspberry, underbrush, dried flowers and a chalky mineral touch, fine tannins and elegant palate. White wines are obtained by fermentation of the juice after pressing. A pre-fermentation maceration is sometimes practiced to extract the aromatic substances from the skins. White wines are normally made from white grapes, but can also be made from red grapes (blanc de noirs).
