Sparkling AOC of the Saumurois (1,600 ha) by strict traditional method (130 kg per 100 L, minimum 9 months on lees): dominant Chenin accompanied by Chardonnay, Sauvignon, Cabernet Franc, Cabernet Sauvignon, Gamay, Grolleau, Pineau d'Aunis and Pinot Noir — 10 authorised varieties. Fine and persistent bubbles, nose of white flowers, white-fleshed fruit and brioche notes. Troglodyte caves carved in the tufa subsoil, ideal for ageing.
