Discover the grape variety: Genouillet

Simple, fresh dry whites with a pale golden colour, supple palate and preserved acidity, showing understated aromas of white flowers, citrus (lemon) and herbaceous notes. Rustic profile now almost gone from commercial cultivation. Preserved in INRAE varietal collections, it testifies to the pre-phylloxera ampelographic diversity of France. Rare French white variety, formerly grown in central France, studied for its heritage interest.

The wine region of Utah

Arid and mountainous western US state, high-altitude vineyards (900–1,500 m) irrigated under a desert climate with marked day-night temperature swings preserving acidity. Cabernet Sauvignon, Syrah, Malbec, Sangiovese and Pinot Noir are the signature reds: fleshy with ripe fruits, garrigue, spice and a mineral touch, balanced tannins. Chardonnay, Sémillon, Malvasia Bianca and Muscat as fresh whites with citrus and ripe fruit. Greater Zion AVA in planning.

The word of the wine: pH

Short for "hydrogen potential", the pH is a parameter that defines whether a medium is acidic or basic. A high pH gives a soft wine, a very low pH translates into a wine that is too acidic.
