Powerful, tannic reds with inky colour and dense texture, with aromas of blackberry, blackcurrant, black plum, leather, liquorice and smoky notes. Very high ageing potential and polyphenol content (health reputation). Star of Madiran AOC in Béarn and the national grape of Uruguay (Canelones, Maldonado). Also grown in Irouléguy and Tursan. Late-ripening red variety from south-west France.

The wine region of Cafayate Valley

Argentine jewel of the Calchaquí Valleys (Salta) at 1,750 m altitude: signature Torrontés as white king — straw robe with golden glints, aromatic with bright notes of rose, jasmine, geranium, citrus, exotic fruits and a spice touch, a surprising palate of vivacity and minerality. Powerful, concentrated Malbec as red king (black cherry, plum, chocolate, spices, firm tannins). Cabernet and Tannat as backup. Extreme altitude, sandy-gravelly draining soils, strong sunshine.


The wine region of Salta

Argentine northwest province, vineyards among the world's highest (1,500-2,800 m) in the Calchaquí Valleys. Torrontés Riojano signature as king white: aromatic and expressive with signature notes of rose, jasmine, white peach, citrus, orange blossom and a musky touch, dry yet round palate — considered the country's finest. Tense altitude Malbec (blackberry, violet, ink), firm Cabernet, dense Tannat. Dry climate, strong thermal swings.

The word of the wine: Malolactic fermentation

Called second fermentation or malo for short. It is the degradation (under the effect of bacteria) of the malic acid naturally present in the wine into milder, less aggressive lactic acid. Some producers or wineries refuse this operation by "blocking the malo" (by cold and adding SO2) to keep a maximum of acidity which carries the aromas and accentuates the sensation of freshness.
