Steiermark, or Styria, is the southernmost wine producing region in Austria, based around the city of Graz and stretching out towards the border with Slovenia. During the vinification process, a "cap" is formed at the top of the vats with the solid parts (skin, pulp, pips, etc.), which contain tannins and colouring elements.
