The wine region of Delaware

Small mid-Atlantic American state with a temperate maritime climate between the Atlantic and Delaware Bay, long season of 199 days, draining sandy soils in the south. Delaware (indigenous white hybrid, named after the state) is the signature variety: aromatic with intense notes of fresh grape, ripe fruits and a honeyed touch, excellent as dry, sparkling and ice wine. Taut Chardonnay and Bordeaux varieties (Cabernet Sauvignon, Cabernet Franc, Merlot) in complement. Emerging robust hybrids.

The word of the wine: Ancestral method

A method of making certain sparkling wines such as blanquette de Limoux, sparkling gaillac or clairette de Die, which consists of a second fermentation in the bottle based on natural sugars and yeasts naturally brought by the grapes (unlike the méthode champenoise, which requires the addition of tirage liquor).
