Discover the grape variety: Pinella blanca
A very old grape variety that has been cultivated for a very long time in Italy - where it originated - and that can still be found today in the Veneto region. It is also known in Slovenia and Bulgaria, but is virtually unknown in France. According to genetic analysis, it is related to the white gouais, which it resembles somewhat. There is a Pinella nera, but it is not clear whether it is the black form.

The wine region of Aragon
Aragon is one of Spain's 17 autonomous communities. Located in the North of the country, it stretches from the imposing Pyrenees mountains in the South to the vast Central Iberian plateau. This is the evacuation of the deposit formed by the yeasts during the second fermentation in the bottle, by opening the bottle. The missing volume is completed with the liqueur de dosage - a mixture of wine and cane sugar - before the final cork is placed. For some years now, some producers have been replacing this sugar with rectified concentrated musts (concentrated grape juice) which give excellent results. A too recent dosage (less than three months) harms the gustatory harmony of the champagne.
