Deeply coloured, fruity reds with a dense purple robe, supple tannins and fresh acidity, with aromas of black cherry, blackberry, plum, blackcurrant, soft spice and earthy notes. Round palate; best young or short ageing. A very cold- and mildew-resistant interspecific variety, driving viticulture in northern regions: Canada (Quebec, Ontario, Nova Scotia) and the northeastern US. Hybrid created in 1911 by Eugène Kuhlmann in Alsace, named in honour of Marshal Foch.

The wine region of San Severo

First DOC of Puglia (1968) in the northern Capitanata, Tavoliere plain around San Severo, alluvial and calcareous soils. Bombino Bianco as the signature white (40–60%) blended with Trebbiano Toscano: dry and light with delicate citrus, herbs and a subtle mineral touch, preserved acidity and low alcohol — ideal as frizzante and spumante. Malvasia del Chianti and Verdeca as complements. Montepulciano and Sangiovese as soft, fruity reds.


The wine region of Puglia

Heel of the boot, 80% red vineyard, sunny and generous. Fleshy, jammy Primitivo (= Zinfandel) with notes of black cherry, plum, chocolate and spices, powerful alcohol and melted tannins, a star in Primitivo di Manduria. Deep, structured Negroamaro (black-bitter) with a bitter finish in Salice Salentino. Structured Nero di Troia, spicy Susumaniello.
