The wine region of Haut-Médoc

Structured Bordeaux AOC upstream of the Gironde north of Bordeaux: signature Cabernet Sauvignon as king red on the gravel mounds — deep-coloured and tannic with notes of blackcurrant, blackberry, cedar, tobacco and a hint of spice, structured and age-worthy. Supple Merlot on clay soils adds roundness (plum, red fruits). Dense Petit Verdot and Cabernet Franc complete it. Evolving bouquet (roast, truffle, prune, leather).

World-renowned age-worthy reds, led by round Merlot (plum, black fruit) or firm Cabernet Sauvignon (blackcurrant, cedar, graphite), blended with Cabernet Franc and Petit Verdot for tannic structure. Structured Médoc and Graves, velvety Saint-Émilion and Pomerol. Also crisp dry whites (Sauvignon/Sémillon) and opulent sweet Sauternes with honey and candied fruit. The word of the wine: Solera

A method of maturing practiced in Andalusia for certain sherries, which aims to continuously blend older and younger wines. It consists of stacking several layers of barrels; those located at ground level (solera) contain the oldest wines, the youngest being stored in the barrels on the upper level. The wine to be bottled is taken from the barrels on the lower level, which is replaced by younger wine from the upper level, and so on.
