Very old Spanish grape variety originating and cultivated in the upper Douro Valley - Ribera del Duero province of Burgos -. It is believed to be the result of a natural cross between the white Heben and a variety that is still unknown today. It should be noted that the synonym albillo is used for many other grape varieties, such as chasselas, muscat of Alexandria or albillo de Toro, verdejo or albillo de Nava, ... and it should not be confused with torrontés riojano. The Limestone Coast GI (Geographical Indication) in SouthAustralia is located in the southeast corner of the state, bordering Victoria in the east. It is one of the most significant region of the country, producing nearly one-third of South Australia's quality wines – some of which are the most highly acclaimed in Australia. The zone is regarded as geologically unique and the feature responsible for producing such high-quality wines is its soil. As the name suggests, limestone forms the basis of the soil here, best represented by the famous 'terra rossa' of Coonawarra.

The word of the wine: White winemaking

White wines are obtained by fermentation of the juice after pressing. A pre-fermentation maceration is sometimes practiced to extract the aromatic substances from the skins. White wines are normally made from white grapes, but can also be made from red grapes (blanc de noirs). The grapes are then pressed as soon as they arrive at the vat house without maceration in order to prevent the colouring matter contained in the skins from "staining" the wine.
