IGP of the ancient Languedoc (south of Béziers, clay-limestone and schist soils around the oppidum of Ensérune, Mediterranean climate): Syrah, Grenache and Mourvèdre are the flagship reds — garrigue, blackberry and pepper profile, complemented by Merlot and Cabernet-Sauvignon with cassis notes and velvety structure. Sunny and rounded Chardonnay, Viognier and Vermentino with white flowers and apricot; ripe white fruits and citrus in the whites.
