Structured and tannic reds with a deep colour and high acidity, on aromas of black cherry, blackberry, plum, spices, leather, tobacco and mineral notes. Tannic and late-ripening, it requires long ageing to round out, then offers fine keeping potential. The absolute star of Bairrada DOC in central Portugal (clay-limestone baga soils), also made as traditional method sparkling wines and taut rosés. The wine region of Waitaki
New Zealand's youngest wine region (first vines 2001), South Island (North Otago), complex soils of limestone, greywacke and schist. Pinot Noir the signature red: elegant and delicate with cherry, raspberry, strawberry, wild herbs and spice — more aerial and fine-boned than Central Otago Pinots. Taut Riesling with citrus, blossom and mineral hints, cutting acidity. Pinot Gris and Chardonnay as complements.
