The wine region of Virginia
Virginia is a state on the eastern seaboard of the United States, located immediately South of Maryland and North of the Carolinas. The state covers 42,750 square miles (110,750 km2) of mountains, valleys and the Atlantic coastal Complex that forms its eastern border. A very old technique that has come back into fashion in modern oenology, which consists of shaking the white wine in the barrels at the end of fermentation, or after fermentation, with a stick or a flail, in order to suspend the fine lees composed of yeasts at the end of their activity. This process is sometimes used for red wines.
