Made as dry whites (Gaillac AOC), sweet passito-style wines and especially iconic sparkling wines: Blanquette de Limoux AOC and Blanquette méthode ancestrale AOC (the oldest documented sparkling method, 1531 at Saint-Hilaire). The wine region of Blanquette méthode ancestrale

France's oldest sparkling AOC, from the Limoux country of Aude (AOC 1938). Natural ancestral method with no liqueur de tirage: partial fermentation then bottled in March on a descending moon, in-bottle secondary fermentation at 6–7°C. Mauzac (100%) is the sole grape — unique honey, acacia and stewed apple aromas, natural residual sweetness, fine bubbles and preserved freshness. The ancestral forerunner of Champagne.
