Simple, light, fruity reds with a pale ruby colour, silky tannins and an airy palate with moderate acidity. Understated aromas of Pyrenean red fruits. Early budding, vigorous, black-rot resistant. Grown in small quantities in south-west France for IGPs, preserved for its heritage value in varietal conservatories. A native black grape from the French Pyrenees, probably from Ariège.

The wine region of Serra Ga&uacutecha

Brazil's wine capital, Rio Grande do Sul. Specialty: high-quality traditional-method sparklers, fine and fruity (apple, citrus, white flowers), elegant bubble, alpine expression of the south. Still wines mostly European: round fruity Merlot, firm Cabernet Sauvignon, more tannic Tannat, fresh Chardonnay, supple Riesling Italico, fine Pinot Noir. Marked by Italian immigration in 1875, humid climate tempered by altitude.

The word of the wine: Reassembly

During the vinification process, a "cap" is formed at the top of the vats with the solid parts (skin, pulp, pips, etc.), which contain tannins and colouring elements. Pumping over consists of emptying the vat from the bottom and pouring the juice back to the top, in order to mix the cap and the juice and to favour the exchange and the extraction. This old technique allows a better exchange between the solid parts and the liquid.
