The wine region of Evros
Greek PGI of Eastern Thrace (2010), Bulgarian-Turkish border area around Soufli. Signature autochthonous Mavroudi as deep red with blackberry, blueberry, morello cherry, cocoa, leather, tobacco and spicy-vanilla notes, firm tannins and dense palate. Rare autochthonous Limnio, rosé Pamidi and Karnachalades as complements. International Cabernet, Merlot, Syrah, Grenache and Cinsault.
The wine region of Thrace
Eastern region shared between Turkey, Greece and Bulgaria, a fascinating native palette. On the Turkish side, Öküzgözü ("ox eye") is the signature red: deep ruby with signature notes of ripe cherry, raspberry, plum, spice and a floral touch, supple tannins and lively acidity. More tannic, structured Boğazkere, local Papazkarası. Fresh Narince whites (citrus, flowers, almond), lively Emir.
The word of the wine: Stirring
In the traditional method, the operation aims to bring the deposits against the cork by the movement of the bottles placed on desks. The stirring can be manual or mechanical (using gyropalettes).
