Vino de la Tierra from the Balearic Islands (1996) on the island of Ibiza, warm Mediterranean climate with cool nights, limestone soils. Monastrell is the historic signature red (thick skin, late ripening perfect for the island): deep ruby with notes of ripe strawberry, cherry, plum, thyme and a perfumed floral touch, round tannins. Tempranillo, Cabernet, Merlot and Syrah as complements. Aromatic Malvasía and saline Macabeo for rich whites with citrus and a honeyed touch.
