Vast GI straddling Victoria and NSW along the Murray (Australia's 3rd in volume): Shiraz signature red king — deep hue with signature notes of ripe berries, sweet spices and smoky hint, supple tannins and gourmand, accessible fruit-forward profile. Chardonnay signature white king — fresh and fruity (peach, melon, tropical) or rich and creamy oaked. Cabernet in complement. GI 25,578 km², sandy-loam alluvial soils, hot low-humidity irrigated climate.

Iconic Hunter Valley: a Sémillon unlike any other, straight, low-alcohol dry whites with vivid citrus when young, evolving over 10-20 years toward honey, toast and lanolin. Medium-bodied Hunter Shiraz, spicy and earthy (leather, red fruits). Also round Chardonnay and aromatic Verdelho.

The word of the wine: Sulphur

An antiseptic and antioxidant substance known since antiquity, probably already used by the Romans. But it was only in modern times that its use was rediscovered.
