The Bollinger Estate is a captivating vineyard in the Champagne region of France. It was founded in 1829 by a charismatic wine merchant, Charles-Camille Bollinger. Since its establishment, the estate has remained in the hands of the Bollinger family and its descendants, serving as an invaluable French exporter of Champagne. The vines of the property sprawl over more than 180 hectares of hillside in the heart of Champagne, surrounded by lush woods. The word of the wine: Draft liquor (champagne)

After blending, the wine is bottled with a liqueur de tirage (a mixture of sugar and wine) and a yeast (selected yeasts). The yeast attacks the sugar and creates carbon dioxide. The fermentation, which lasts about two months, is prolonged by an ageing period (15 months minimum in total). The bottle is capped (some rare vintages are capped with a staple and a cork).
