Australian historical birthplace (vineyards planted from 1830, NSW, warm and humid alluvial plain, Eileen Hardy and Tyrrell's crus), famous for two star varieties. Semillon signature dry white (7-10% alc) — acid and austere in youth, metamorphosing after 10-15 years into extraordinary grilled toast, confit lemon, hazelnut and beeswax. Fleshy and peppery Shiraz in deep and velvety red with notes of leather and spices. Chardonnay, Verdelho and Pinot Noir as complements.
