The wine region of Mâcon-Uchizy
Mâcon geographic designation (2005, ~43 ha) on Uchizy east of the Mâconnais hills overlooking the Saône: 100% Chardonnay whites of a brilliant pale gold, expressive nose of ripe orchard fruits (apple, pear, peach) and white flowers (lily of the valley, acacia). Vines at 240–300 m exposed to the morning sun, contrasting continental climate – mists and cold winters, strong summer heat. Substrate alternating Jurassic mid-to-upper limestone ("caille") and marls (155 Ma).
The wine region of Burgundy
Absolute reference for great terroir wines: opulent, mineral Chardonnay in whites (chiselled Chablis, buttery Meursault, majestic Montrachet), fine and silky Pinot Noir in reds (full-bodied Gevrey, structured Pommard, delicate Volnay). Exceptional age-worthy wines with complex notes - red fruits, undergrowth, butter, hazelnut. Some lively Aligoté and light Gamay (Mâconnais). 29,500 ha, 84 tiered AOCs (Régionale, Village, 1er Cru, Grand Cru), 1,247 UNESCO Climats.
The word of the wine: Mouth
The mouth is the third stage of wine tasting after the eye and nose. In the mouth, the taster identifies the aromas through the retronasal route, the flavours and the texture. It is in the mouth that the overall balance of the wine is apprehended.
