Discover the grape variety: Carcajolo Bianco

Fresh, simple dry whites with a pale golden robe, a supple palate and preserved acidity. Understated aromas of citrus, white flowers and Mediterranean iodine notes. Rustic, airy profile, best drunk young. A precious witness of Corsica's insular ampelographic heritage, often blended in local whites and subject to conservation plantings under the CRVI. White mutation of Carcajolo Noir, a rare Corsican grape grown in Corse-du-Sud.

The wine region of Hilltops

Cool-climate GI of the western foothills of the Great Dividing Range (NSW, ~500 m): signature Shiraz red king — rich and complex with hallmark notes of black fruits (blackberry, plum), pepper and spice, acidity preserved by diurnal contrasts, deep colour. Elegant complementary Cabernet Sauvignon with red berries, spice and mellow medium tannins, cellarable. Emerging Italian and Spanish varieties. GI, red granitic clays over basalt, cool continental climate.

The wine region of Nouvelle-Galles du Sud

Australia's 2nd wine state with diverse regions. Iconic Hunter Valley: a Sémillon unlike any other, straight, low-alcohol dry whites with vivid citrus when young, evolving over 10-20 years toward honey, toast and lanolin. Medium-bodied Hunter Shiraz, spicy and earthy (leather, red fruits). Also round Chardonnay and aromatic Verdelho.

The word of the wine: Lies

A deposit formed by dead yeast after fermentation. Some white wines are aged on their lees, which makes their aromas and structure more complex and richer.
