Whites with many faces: mineral and taut at Chablis (lemon, green apple, flint), opulent and buttery at Meursault and Puligny-Montrachet (hazelnut, brioche, yellow fruits), tense and chalky in Champagne (Blanc de Blancs). Also vinified sparkling and widely exported (Sonoma, Margaret River, Casablanca). A Burgundian variety, a cross of Pinot Noir × Gouais Blanc, half-sibling of Aligoté.
Mexican vinicultural altiplano (Trancoso, Jerez, Fresnillo) at 2,000–2,500 m, dry and cold climate with marked thermal amplitude slowing maturation. Tempranillo, Cabernet Sauvignon and Merlot are signature king reds — structured with intense black cherry, blackberry, plum, leather and a spiced touch, firm tannins and ageing potential. Syrah, Malbec and Ruby Cabernet as complements. Chenin Blanc and Ugni Blanc as fresh altitude whites.
