The wine region of Ycoden-Daute-Isora
DOP (1994) on the western slope of Tenerife (Canary Islands), with exceptional altitude vineyards (50–1,500 m) on volcanic slopes of Teide, all ungrafted. Listán Blanco is the white king (≥80%): dry and lively with citrus, green apple, white flowers and a smoky volcanic mineral note. Listán Negro and Tintilla (Trousseau) give supple reds with red fruits, garrigue and a peppery touch. Malvasía and Moscatel produce aromatic whites.
The wine region of Iles Canaries
Spanish vineyard archipelago spared by phylloxera, ~50 grape varieties of which 20 unique worldwide. Black volcanic soils and sub-tropical oceanic climate. Listán Negro in light, spicy red with signature notes of red cherry, wild strawberry, smoke, pepper and a volcanic mineral touch, fine tannins — an atypical style. Supple Negramoll, fresh Listán Blanco (citrus, flowers), aromatic Malvasía (candied orange, honey) historically famous.
The word of the wine: Assembly
Blending of several wines to obtain a single batch. Using wines of the same origin, blending is very different from coupage - a mixture of wines from different origins - which has a pejorative connotation.
