The wine region of Chablis 1er Cru 'Vaillons'
Flagship Premier Cru climat on 129 ha left bank of the Serein: 100% Chardonnay on 8 associated climats (Lys, Sécher, Chatains, Beugnons, Mélinots, Roncières, Épinottes) — whites more floral and delicate than right-bank Premiers Crus, intense Kimmeridgian minerality. Pale gold robe, nose of white flowers, citrus and iodized notes, very classic profile. Southeast exposure with morning sun, 5-10 year aging.
The wine region of Burgundy
Absolute reference for great terroir wines: opulent, mineral Chardonnay in whites (chiselled Chablis, buttery Meursault, majestic Montrachet), fine and silky Pinot Noir in reds (full-bodied Gevrey, structured Pommard, delicate Volnay). Exceptional age-worthy wines with complex notes - red fruits, undergrowth, butter, hazelnut. Some lively Aligoté and light Gamay (Mâconnais). 29,500 ha, 84 tiered AOCs (Régionale, Village, 1er Cru, Grand Cru), 1,247 UNESCO Climats.
The word of the wine: Local wine
Table wine, but with the origin indicated. It corresponds to a particular legislation: the freedom to use grape varieties is greater than for the AOC, but the quality criteria such as the approval tastings can sometimes be more demanding. The legislation is still evolving, but for the moment there are three levels: regional (e.g. Vin de Pays d'Oc), departmental and local (e.g. Côtes de Thongue).
