Lively, fruity whites and pale rosés best drunk young, with a pale salmon robe, an airy palate with preserved acidity, and signature aromas of green apple, pear, white flowers (hawthorn), and fresh herbaceous notes. Also produced as traditional sparkling wine. Traditionally part of Blanquette de Limoux and South-West Crémant blends. A pink-skinned mutation of Mauzac, an emblematic South-West variety.

Washington AVA (western edge of the Columbia Basin near Quincy, 13th AVA 2012, shaped by Missoula glacial floods, sandy-volcanic soils, dry climate ~150–200 mm/year): Riesling is the signature cool-climate king — crisp notes of lime zest, green apple, slate minerality and naturally high acidity (7–9 g/l). Chardonnay, Pinot Gris and Sauvignon Blanc as complements. Rain shadow of the Cascades produces structured Riesling expression.

Star Cabernet Sauvignon (~60% of reds): powerful and structured with signature notes of blackcurrant, blackberry, cedar, dry herbs and graphite, firm tannins. Fleshy, peppery Syrah (black fruits, smoked meat). Round, fruity Merlot, historic mineral Riesling (dry and off-dry), precise Chardonnay and ample Sémillon.
