The wine region of Graach
Historic village of the Mittelmosel (Bereich Bernkastel), 135 ha almost entirely planted with Riesling on altered blue slate. Domprobst (Grosse Lage) leads in whites — taut and mineral with citrus, peach, white flowers and a spicy note, rare finesse and excellent ageing potential. Himmelreich (87 ha) is ample, pure slate with lively aromas of ripe citrus, flint and a saline hint, cutting acidity. From Kabinett to Auslese.
The wine region of Mosel
Kingdom of lively, crystalline Riesling: citrus, green apple, gunflint, tangy tension and signature slate minerality. From light, fruity Kabinett to off-dry Spätlese, up to sweet Auslese and Trockenbeerenauslese of rare finesse. Some supple Müller-Thurgau and lively Elbling. Steeply sloped vineyards (up to 65% at the Bremmer Calmont) on blue and grey slate, 5,400 ha of Riesling (61.
The word of the wine: Bordeaux barrel
Barrels of 220 to 225 litres. The toasting of the barrel to bend the staves (curved boards used to make the barrels) can vary according to the coopers and the demand. A gentle and slow toasting has little effect on the aromas. On the other hand, a strong toasting gives aromas of coffee or cocoa which will influence the taste of the wine. A wine barrel has already been aged for a year and has less impact on the wine than a new barrel.
