Crisp, neutral dry whites with a pale colour, a supple palate and high acidity, showing simple aromas of white flowers, white fruits (apple), citrus and understated neutral notes. A productive style mainly destined for Armagnac distillation. Grown in Gascony in the South-West. Not to be confused with Jurançon AOC in Béarn (Gros Manseng, Petit Manseng, Courbu). Indigenous French variety of the South-West.

The wine region of Quer&eacutetaro

Wine state of central Mexico, high-altitude vineyards (1,800-2,000 m), strong thermal amplitudes. National leader in traditional-method sparklings with notes of white apple, citrus, white flowers and a brioche touch, fine bubbles and fresh palate. Supple Merlot reds (plum, cherry), solar Syrah (blackberry, pepper), dense Malbec, accessible Tempranillo. Full Chardonnay whites, zesty Sauvignon, straight Macabeo.

Central Israel between Jerusalem and Tel Aviv, high-altitude vineyards (up to 1,000 m) in the Judean Hills, terra rossa over limestone and tufa, warm days and cool nights. Cabernet Sauvignon, Merlot and Syrah are the signature reds: elegant and structured with blackcurrant, blackberry, black cherry, Mediterranean garrigue and a mineral-calcareous hint, balanced tannins. Taut mineral Chardonnay, lively Sauvignon and ample Sémillon as refined whites. Emerging Pinot Noir.

The word of the wine: Cryo-extraction

This technique was very popular at the end of the 80's in Sauternes, a little less so now. The grapes are frozen before pressing, and the water transformed into ice remains in the marc, only the sugar flows out. As with the concentrators, the "cryo" can also increase bad taste and greenness.
