A very old grape variety that has been cultivated for a very long time in Italy - where it originated - and that can still be found today in the Veneto region. The wine region of Rioja

It is also possible to macerate after fermentation, but gently, so as not to extract the tannins from the seeds, which are greener. Because of its solvent power, alcohol favours extraction.
